Pinci Alle Briciole
with pici pasta
Ingredients
  • 1⅓ cups olive oil
  • 3 cloves garlic, chopped
  • ½ teaspoon dried red pepper flakes
  • ½ loaf day-old bread, crumbled
  • salt to taste
Steps
  1. Gently fry the garlic and pepper flakes in olive oil until the garlic is lightly golden. add the bread crumbs and a pinch of salt. Stir continuously until the bread begins to get crisp. remove from stove and toss with pici. (The bread crumbles more easily and finely if you soak it in water first; then squeeze dry with your hands.)
