Green Minestrone with Pesto and White Beans
Ingredients

  • 3 cups basil leaves, loosely packed

  • ¼ cup extra virgin olive oil

  • ½ teaspoon salt

  • 2 tablespoon olive oil
  • 2 leeks white parts only
  • 1 cup chopped asparagus
  • 1 cup chopped green beans
  • 1 cup diced zucchini 1 small
  • 1 cup green peas fresh or frozen
  • 4 cloves garlic minced
  • 8 cups chicken or vegetable broth low or no sodium
  • 2 cups navy beans 540 ml/19 oz
  • 3 cups kale chopped (or greens of your choice)
  • ½ cup pesto plus more for serving, optional
  • ½ lemon juiced
  • Salt and pepper to taste
