Baked Parmesan zucchini fries

Servings: 2 to 3 (~16 fries each)

Ingredients
  • 2 medium zucchinis
  • 1 egg
  • ¾ cup whole wheat panko brad crumbs
  • ¼ cup reduced fat grated Parmesan cheese
  • ½ tsp black pepper
Steps
  1. Preheat oven to 425.
  2. Prep baking sheet with parchment paper.
  3. Slice zucchini in half and then cut the halves in half again. Cut each of the 4 pieces into 8 separate pieces so that you should have 32 pieces total once complete.
  4. Whisk egg in medium size bowl.
  5. Mix together remaining ingredients in separate bowl.
  6. Use one hand to dip zucchini covering completely in egg. Use other hand to roll pieces into beading mixture; trying to keep each hand out of the other bowl to prevent clumping.
  7. Place in single layer on prepared baking sheet.
  8. Bake for 20 minutes. Remove from oven, flip, and bake for additional 5 to 10 minutes.
  9. Serve with your choice of dipping sauces.
