Homemade Cauliflower Pizza Crust

Here's a low carb option for all my fellow pizza lovers out there!
Servings: 4 to 6 squares

Ingredients
- 1 medium-large head of cauliflower (pulverized: you can use a traditional cheese grater, blender and/or food processor) - not going to lie, I used a blender and it wasn't the easiest task; I had to blend a couple pieces at a time
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp black pepper
- 1 tsp garlic powder
- ½ tsp onion powder
- Dash of sea salt
- ½ cup reduced-fat shredded cheese of choice (I used Mexican blend because it's what I had on hand)
- 1 large egg
Steps
- Preheat oven to 425 degrees.
- Place pulverized cauliflower into microwave safe bowl and cover with plastic wrap. Microwave for 4 minutes. Let cool.
- Once cooled, place cooked cauliflower into a mesh strainer, fasten over a bowl and push down with flat surface (spoon or spatula) draining as much liquid as you can. Afterwards, you can also press down with towel and/or paper towel to remove additional fluid.
- Add cauliflower to bowl, fluff with fork and add basil, oregano, pepper, garlic powder, salt and cheese of choice.
- Add egg and mix until evenly coated.
- Prep baking sheet with parchment paper. Spray prepped sheet with cooking spray prior to pressing mixture down on baking sheet until you have a "dough" that's approximately ¼ inch thick. Make sure mixture is pressed evenly and tightly together.
- Bake for 25+ minutes until edges and crust is golden-dark golden brown.
- Remove from oven. Drizzle with extra virgin olive oil. Add toppings of choice and bake for another 5 to 10 minutes. ENJOY!
- **Picture is a "half-and-half" pizza. - Homemade cheese spread (reduced-fat cream cheese, cojita cheese, and minced garlic). - First half: tomatoes, dried basil, oregano, cayenne and sprinkled with a little more shredded Mexican cheese. --Second half: same homemade cheese spread, leftover shredded chicken, jalepeno (pepperoncinis or banana peppers would be delicious too, jalepeno is just what I had on hand), and then drizzled with barbecue sauce.
