Aip Lemon Blueberry Coffeecake {Egg-Free, Dairy-Free, Nut-Free}
Ingredients
  • 1-½ cups blueberries fresh or frozen
  • 1 cup coconut milk, warmed slightly
  • ½ cup Otto's cassava flour
  • ½ cup coconut butter, warmed slightly
  • ⅓ cup coconut flour
  • ¼ cup coconut oil melted and cooled, or avocado oil
  • ¼ cup maple syrup or honey
  • 1 Tablespoon gelatin
  • 1 Tablespoon lemon juice
  • ½ teaspoon baking soda, sifted
  • ¼ teaspoon sea salt
  • 1 t grated lemon zest (test and add more if needed)
