CHICKEN SCOTCH EGGS

Ingredients
  • Hard boil 4 eggs, cool and then peel the shells off
  • Put the oven on at 180
  • Mix 500g of Turkey Breast Mince (3%fat) I got mine from Sainsbury's with a tsp of mixed herbs, salt, pepper and a splash of Worcestershire Sauce.
  • Divde the turkey into 4 portions on a chopping board and flatten them into rectangles.  Add the hard boiled egg and wrap the turkey round the egg sealing the ends and finishing off with rolling it round in my hands to get an even coverage.

  • Make up an egg wash using 1 egg, salt and pepper.  Then whiz 1 Warburtons thin using a hand blender into breadcrumbs, adding fresh parsley, fresh chives, salt and pepper.
  • Dip the turkey wrapped eggs into the egg wash followed by rolling and covering in the breadcrumbs before putting on a frylight sprayed baking tray into the oven for 25 to 30 mins.

  • NB: The Warburtons thin is 44g of breadcrumbs for 3SP whereas 3SP of oats or 3SP of Ryvita's will only give you 30g worth of crumbmix so its definitely worth using a thin so you get more crumb mix to coat your eggs.

  • For extra points you could add some grated parmesan to the breadcrumb mix - yummy.
