Checkered Chicken - About 250 Calories a Serving

Ingredients
- 1 large pan
- 2 medium onions or 2 shallots - very finely chopped
- 2 garlic cloves finely chopped
- 1 red bell pepper diced
- 1 green bell pepper diced
- 1 yellow bell pepper diced
- 1 orange bell pepper diced
- 1 lb of cooked chicken breast
- 2 tablespoons of diced unsalted peanuts
- 1 bags or cauliflower rice (10 oz) - this can be doubled to strech the recipe, add a little more sauce if you do this.
- teriaky sauce or soy sauce for tossing the chicken in after cooking.
- subheading: Sauce:
- ¼ cup of soy sauce
- ½ cup of water
- 1 tablespoon of corn starch
Steps
- Cook the chicken then dice into cubes, toss it in a bowl with teriaky sauce then set aside.
- Cook the onions/shallots and the garlic then sed aside
- Cook the bell peppers over high heat then set aside - this is a lot on your pan, don't let it pile up as they'll get rubbery without direct heat, do multiple batches if need be and set aside.
- Toss the cauliflower rice with some oil in the pan untill lighlt golden then set aside.
- Combine the soy sauce, water and corn starch into a cup and mix it well untill it has no clumps.
- Add the onions, bell peppers, cauliflower rice, chicken all back into the pan then pour the sauce over all over it, mix it well.
- Let it cook untill the sauce slighly thickens.
- Serve in a bowl, top with peanuts to taste.
