Checkered Chicken - About 250 Calories a Serving
Ingredients
  • 1 large pan
  • 2 medium onions or 2 shallots - very finely chopped
  • 2 garlic cloves finely chopped
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 yellow bell pepper diced
  • 1 orange bell pepper diced
  • 1 lb of cooked chicken breast
  • 2 tablespoons of diced unsalted peanuts
  • 1 bags or cauliflower rice (10 oz) - this can be doubled to strech the recipe, add a little more sauce if you do this.
  • teriaky sauce or soy sauce for tossing the chicken in after cooking.
  • subheading: Sauce:
  • ¼ cup of soy sauce
  • ½ cup of water
  • 1 tablespoon of corn starch
Steps
  1. Cook the chicken then dice into cubes, toss it in a bowl with teriaky sauce then set aside.
  2. Cook the onions/shallots and the garlic then sed aside
  3. Cook the bell peppers over high heat then set aside - this is a lot on your pan, don't let it pile up as they'll get rubbery without direct heat, do multiple batches if need be and set aside.
  4. Toss the cauliflower rice with some oil in the pan untill lighlt golden then set aside.
  5. Combine the soy sauce, water and corn starch into a cup and mix it well untill it has no clumps.
  6. Add the onions, bell peppers, cauliflower rice, chicken all back into the pan then pour the sauce over all over it, mix it well.
  7. Let it cook untill the sauce slighly thickens.
  8. Serve in a bowl, top with peanuts to taste.
