Steak Salad with Charred Onion Vinaigrette & Garlic-Cumin Yogurt
Ingredients
  • 1 ½ teaspoons ground cumin, divided
  • 1 teaspoon ground coriander
  • ½ teaspoon paprika
  • ½ teaspoon crushed red pepper
  • 1 pound skirt or flank steak
  • ½ medium red onion, peeled, root end left intact
  • ½ teaspoon extra-virgin olive oil plus 3 ½ tablespoons, divided
  • 2 tablespoons red-wine vinegar
  • ½ teaspoon honey
  • ½ teaspoon whole-grain mustard
  • 1 cup low-fat plain Greek yogurt
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 small clove garlic, grated
  • 1 head romaine lettuce, cut lengthwise into 4 wedges
  • 1 pint cherry tomatoes, halved
  • 2 mini cucumbers, diced
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh chives
