Ingredients
  • 3 carrots, diced
  • 2 ribs of celery, diced
  • 2 medium potatoes, diced
  • 1 medium onion, diced
  • 1 large clove of garlic, minced
  • 4 cups of  diced tomatoes
  • 2 ½ cups chicken broth
  • 2 cups water
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon ground black pepper
  • 1 cup of fresh sweet corn, cut off the cob
  • 2 cups green beans, cut into bite size pieces
  • 1 cup peas (we used shelled sugar snap peas)
  • 1 large zucchini, chopped
  • 1 cup cabbage, cut in thin strips
