White Chicken Enchiladas
Swap out flour tortillas for corn and use arrowroot powder for the sauce = gluten free!
Ingredients
  • 8 to 10 small corn or flour tortillas
  • 3 cups cooked chicken shredded or chopped (for a meatless option you can also sauté greens like spinach or arugula and add in place of the chicken. Sauté, add some cream and nightshade free spices like cumin and cilantro, and add as a layer with the cheese)
  • 3 cups Monterey jack or co-jack cheese shredded-divided
  • 3 tablespoons unsalted butter
  • 3 tablespoons flour (arrowroot powder)
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 (4-ounce can) diced green chilies mild
  • 2 to 3 tablespoons green onions sliced
