Pam's Nacho Chili
This is a thicker chili for serving over nachos.

Ingredients
  • 3 lbs ground sirloin (or round)
  • 1 large onion chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 3 to 4 cloves garlic, finely chopped
  • 1 large can crushed tomatoes
  • 2 (15oz) cans kidney beans
  • 2 (15oz) cans tomato sauce
  • 1 (6oz) can tomato paste
  • 1 tsp chili powder
  • 1 tsp red pepper flakes
  • 1 tsp basil
  • 1 tsp oregano
  • 3 tbsps sugar
  • 1 tsp cinnamon
  • salt & pepper to taste

  • For serving: Shredded Cheddar or Colby cheese, chopped lettuce, chopped tomatoes, chopped onion, salsa, sour cream and chopped avocado if desired.
Steps
  1. In a large pot saute' ground beef, onion, peppers and garlic until beef is brown and vegetables are almost tender. Drain off any excess grease.
  2. Add remaining ingredients and simmer on stove for 1 hour.
  3. When ready to serve; lay a pile of tortilla chips on oven proof skillet. (Cast iron skillet is best) Pour a large ladle of chili over chips, top with shredded cheese. Bake in 400ยบ oven until cheese is melted. Remove from oven and top with lettuce, tomatoes, fresh chopped onion, salsa, sour cream and avocado.
