Banana Cupcakes {Cream Cheese Frosting}
Ingredients

  • 2 overripe bananas: measured to get ¾ cup
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • ¾ cup buttermilk (or use plain milk vinegar -- see notes)

  • ½ cup unsalted butter, at room temperature
  • 1 package (8 ounces) full-fat cream cheese, at room temperature (do not use low fat)
  • ½ teaspoon vanilla bean paste, or use 1 teaspoon pure vanilla extract
  • ⅛ teaspoon fine sea salt
  • ¼ teaspoon ground cinnamon
  • 3 cups powdered sugar
  • Optional: banana chips to garnish
