Avocado Chickpea Cucumber and Tomato Salad
Ingredients
  • 1 medium-sized cucumber sliced in chunks seeds removed with a spoon
  • 1 cup grape tomatoes sliced in half
  • 1 can garbanzo beans (chickpeas) rinsed and drained
  • 1 avocado peeled and sliced in wedges
  • ½ cup sliced kalamata olives
  • ½ cup freshly chopped parsley
  • ½ teaspoon each oregano, garlic powder salt and pepper
  • pinch of cayenne pepper
  • 3 tablespoon lime juice
  • 1 tablespoon lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 cup chopped mozzarella or ½ cup feta cheese
  • Optional Suggestions to Change it up!
  • diced hot, sweet, jalapeno peppers
  • any kind of olives
  • cubed cheddar cheese
  • diced celery
  • carrots
  • snap peas
  • julienned broccoli
  • arugula
  • spinach leaves
  • cabbage thin sliced
  • chopped asparagus
  • chopped cauliflower
  • Vidalia onions sliced
  • fresh garlic slices
  • dill weed chopped
  • heart of palm
  • artichoke hearts
  • diced fresh zucchini
  • black beans
  • freshly cooked corn off the cob
  • sliced radishes
  • pork rinds instead of croutons
  • craisins, raisins, walnuts, sunflower seeds, roasted almonds

  • slices of hard-boiled eggs
  • for those not watching calories or weight feel free to add crispy bacon or pepperoni (for those who want meat)
