Pumpkin Chocolate Chip Oat Bars
Bake for 30 minutes (get them crispier) use full 3 cups oats, not 2 1/2
Ingredients
  • 3 cups gluten free oats
  • 1 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ⅛ teaspoon ground cloves or allspice
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 2 teaspoons pure vanilla extract
  • ½ cup unsweetened applesauce (or sub ⅓ cup melted butter or coconut oil)
  • ½ cup packed dark brown sugar or coconut sugar
  • 1 tablespoon olive or melted coconut oil
  • ⅓ cup vegan chocolate chips, plus 2 tablespoons for sprinkling on top
