Ingredients
- 4 Bananas , very ripe
- 2 large Egg, beaten
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1⁄ 4 cup Unsweetened Applesauce
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Pure Vanilla Extract
- 3⁄ 4 cup White Sugar
- 2 cups All-Purpose Flour
- 1⁄ 2 cup Semisweet Chocolate Chips, optional
Steps
- Preheat oven to 350 degrees. Lightly grease or line a 12-cup muffin tin.
- Place bananas into a large mixing bowl. Using a fork, mash thoroughly.
- Add eggs, salt, baking soda, applesauce, cinnamon and vanilla and mix to combine.
- Add sugar and flour and mix until combined.
- Add in chocolate chips, if using, and mix until evenly distributed.
- Pour batter into prepared muffin cups.
- Bake in preheated oven for 20 to 25 minutes, or until browned and a toothpick inserted into the center of the muffin comes out clean.
Notes
- Some of the recommendations said to use 4 oz unsweetened applesauce. For some reason I only used ¼ cup (2oz). Maybe check kitchenmonki to make sure it wasn’t a copy error.
