Ingredients
  • 4 Bananas , very ripe
  • 2 large Egg, beaten
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1⁄ 4 cup Unsweetened Applesauce
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Pure Vanilla Extract
  • 3⁄ 4 cup White Sugar
  • 2 cups All-Purpose Flour
  • 1⁄ 2 cup Semisweet Chocolate Chips, optional
Steps
  1. Preheat oven to 350 degrees. Lightly grease or line a 12-cup muffin tin.
  2. Place bananas into a large mixing bowl. Using a fork, mash thoroughly.
  3. Add eggs, salt, baking soda, applesauce, cinnamon and vanilla and mix to combine.
  4. Add sugar and flour and mix until combined.
  5. Add in chocolate chips, if using, and mix until evenly distributed.
  6. Pour batter into prepared muffin cups.
  7. Bake in preheated oven for 20 to 25 minutes, or until browned and a toothpick inserted into the center of the muffin comes out clean.
Notes
  • Some of the recommendations said to use 4 oz unsweetened applesauce. For some reason I only used ¼ cup (2oz). Maybe check kitchenmonki to make sure it wasn’t a copy error.
