Abuelo Mexican Restaurant's Papas Con Chile, by Chef Luis
These amazing potatoes are a great Tex-Mex side that is served at Abuelo's restaurants here in the states from Arizona to Virginia. Everyone is always requesting the recipe, so Chef Luis finally spilled the beans, and here it is for all of us to try. We LOVE them! These are great served with a recipe I posted for Abuelo Mexican Restaurant's Chile Con Queso over the top. Yum!
Ingredients
  • 3 pounds red potatoes
  • 1 small white onion, peeled and diced (about 1 cup)
  • 4 tablespoons butter
  • 3 ounces cream cheese (cut into 2 inch squares)
  • ½ cup heavy cream, warmed
  • 10 ounces Velveeta cheese (cut into 2 inch squares)
  • ½ tablespoon salt
  • ¾ teaspoon garlic powder
  • ¼ cup sour cream, room temperature
  • ½ cup red bell peppers, diced
  • ½ cup diced green bell peppers
  • 2 cans (4.5 ounces each) green chilies, chopped
  • ½ cup green onion tops, chopped
  • 2 tablespoons jalapeno, finely chopped (seeds removed)
