Creamy Carrot Ginger Soup
Ingredients
  • 1 tablespoon olive oil or coconut oil
  • 1 red or yellow onion, chopped
  • 2 tablespoons ginger, chopped (about 1″ knob)
  • 2 teaspoons garlic, minced (about 2 cloves)
  • 5 cups carrot, peeled & chopped (about 7 to 9 carrots, depending on size)
  • 16 ounces vegetable broth
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground white pepper, optional
  • 1 can coconut milk, 13.6 ounces
