Ingredients
  • 1 ½ Tablespoons olive oil or avocado oil
  • 1 pound ground turkey
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 ½ Tablespoons Italian seasoning
  • ½ teaspoon sea salt, plus more to taste
  • ½ teaspoon ground pepper
  • ¼ teaspoon cinnamon
  • 2 to 3 cups fresh baby spinach, roughly chopped
  • 2 large green bell peppers, diced (any color bell pepper will work)
  • 2 cups low-sodium vegetable broth
  • 1 15 ounce can diced tomatoes, undrained
  • 1 8 ounce can tomato sauce
  • 1 Tablespoon tamari or soy sauce (or coconut aminos)
  • 1 cup uncooked long grain brown rice (I used Lundberg Farm long grain brown rice)
  • 1 cup shredded cheese, I used cheddar
  • for serving: chopped fresh parsley, optional
