Drunken Noodles (Whole30, Paleo)
Ingredients

  • subheading: For the Pad Kee Mao:
  • 4 small-medium yellow squash I use one squash per person. It looks like a lot of noodles when you spiralize it, but they cook down quite a bit
  • 1 tsp. Diamond crystal kosher salt
  • 1 Tbsp. ghee or other cooking oil
  • 1 yellow onion sliced
  • 1 red yellow or orange bell pepper, sliced
  • 2 cups Chinese broccoli**
  • ¼ cup Thai basil
  • Sriracha and sliced Thai chilis for serving
