1 tsp salt

½ tsp black pepper

2 tbsp olive oil

1 onion chopped

2 celery ribs chopped

2 carrots chopped

10 garlic cloves peeled but left whole or halved if they’re large

2 cups red wine dry (500ml)

1.5 cups beef stock or broth (350ml)

2 tbsp tomato paste

4 bay leaves

1 tsp thyme dried or 3 to 4 sprigs of thyme

subheading: To finish:

1.5 tbsp honey

1.5 tbsp flour to thicken the sauce

1 tbsp butter

Fresh parsley for garnish
