Simple and Delicious Puerto Rican Rice and Chicken
Ingredients
  • 5 to 6 boneless chicken tenders
  • 2 tsp. paprika
  • Salt and pepper to taste
  • 4 tbsp. olive oil
  • 1 cup onion, chopped
  • 1 cup green pepper, diced
  • 1 cup red pepper, diced
  • 1 tbsp. minced garlic
  • 2 cups basmati rice
  • 3 cups chicken broth
  • ½ tsp.saffron
  • ½ tsp. Curry
  • 1 bag of frozen mixed vegetables (corn, carrots, peas and green beans)
  • Green onions
