Southwest Cheesy Lentils & Rice (instant pot)

Ingredients
  • ½ red onion (finely chopped)
  • ½ red bell pepper (finely chopped)
  • 4 garlic cloves (minced)
  • ¾ cup brown rice
  • ¾ cup brown lentils
  • 2 ½ cups vegetable broth
  • 1 15-ounce can petite diced tomatoes
  • 1 4-ounce can diced green chiles
  • 1 Tbsp taco seasoning
  • 2 tsp dried oregano
  • 1 tsp kosher salt
  • ½ tsp Black pepper
  • 2 cups shredded cheese (I prefer mozzarella and sharp cheddar)
  • ¼ cup chopped fresh cilantro (for topping)
