Strawberry banana yogurt clusters
Ingredients
  • ・2 cups chopped strawberries
  • ・1 large chopped banana
  • ・½ cup plain Greek yogurt (I used full fat for extra creaminess)
  • ・1 Tbsp honey
  • ・1 cup dark chocolate chips (I used @hukitchen no sugar added)
  • ・1 Tbsp coconut oil
  • ・chopped roasted + salted peanuts, for sprinkling
Steps
  1. 1️⃣ Add fruit, yogurt and honey into a bowl and gently toss until combined.
  2. 2️⃣ Scoop mixture onto a parchment lined baking sheet and place in the freezer for about 1 hour.
  3. 3️⃣ Melt your chocolate chips and coconut oil in 30 sec increments in the microwave or using a double boiler. Remove the yogurt clusters from the freezer and coat each one in chocolate. PRO TIP: I don’t recommend dipping the clusters into the chocolate, the cold cluster will cause the chocolate to harden and make it very difficult to work with. I learned this the hard way.
  4. 4️⃣ Quickly sprinkle with chopped peanuts, place in the freezer until chocolate has hardened and enjoy!
  5. Store leftover in the freezer for about 1 month. I just recommend letting them sit out of the freezer for about 5 minutes before eating because they tend to freeze pretty solid.
