  • 1 lb. of smoked sausage (andouille, kielbasa or polish sausage)
  • 1 green bell pepper, cut into 1 inch chunks
  • 1 jalapeno, halved and deseeded (optional)
  • 1 large onion, cut into 1 inch chunks
  • 3 stalks of celery, cut into 1 inch chunks
  • 5 cloves of garlic
  • 2 bay leaves
