German Potato Salad
Ingredients
  • 1 cup bacon, diced
  • 1 cup celery, sliced
  • 1 cup onion, chopped
  • 3 tsps. salt
  • 3 tbsps. flour
  • ⅔ cup sugar
  • ⅔ cup vinegar
  • ½ tsp. pepper
  • 1⅓ cups water
  • 8 cups potatoes, sliced and cooked
Steps
  1. Fry bacon; drain. Return 4 tbsps. fat to skillet.
  2. Add celery, onion and salt; cook gently for 5 minutes.
  3. Add flour and cook gently for 5 minutes.
  4. Add sugar, vinegar, pepper and water; bring to boil (add water if too thick).
  5. Layer potatoes in 3-quart casserole dish. Sprinkle bacon on top.
  6. Pour cooked mixture over top of potatoes and bacon. Cover and bake 30 minutes at 350 degrees.
