Deli Style Roast Beef Slices
Reverse Sear
Ingredients
  • 3 pound eye of round roast
  • 1 tablespoon of olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper, I used ⅓ teaspoon each of black, white, and red pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Steps
  1. Preheat the oven to 225. This could also be cooked on a smoker at 225. I used pecan logs.
  2. Coat the outside of the roast with the olive oil. Combine the salt, pepper, garlic and onion powders. Rub the spices all over the roast.
  3. Roast or smoke your beef for several hours until the internal temperature is 120 degrees.
  4. Reverse sear the roast by heating a cast iron skillet and browning the roast on all sides. Alternatively, heat the outdoor grill to 500 degrees and sear all sides.
  5. Tent the roast with aluminum foil for 15 minutes. Slice as thin as possible.
