Reverse Sear
Ingredients
- 3 pound eye of round roast
- 1 tablespoon of olive oil
- 1 teaspoon salt
- 1 teaspoon pepper, I used ⅓ teaspoon each of black, white, and red pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Steps
- Preheat the oven to 225. This could also be cooked on a smoker at 225. I used pecan logs.
- Coat the outside of the roast with the olive oil. Combine the salt, pepper, garlic and onion powders. Rub the spices all over the roast.
- Roast or smoke your beef for several hours until the internal temperature is 120 degrees.
- Reverse sear the roast by heating a cast iron skillet and browning the roast on all sides. Alternatively, heat the outdoor grill to 500 degrees and sear all sides.
- Tent the roast with aluminum foil for 15 minutes. Slice as thin as possible.
