Yonnie's Cream Scones

I made these for Metta's tea parties a lot, with half size scones.
Ingredients
- 1¾ cup flour
- 2¼ teaspoon baking powder
- 1 tablespoon sugar (Y uses 2)
- ½ teaspoon salt
- 1¼ heavy cream
- subheading: Optional additions:
- raisins and chopped pecans (Y adds)
- cranberries/orange zest
- fresh blueberries/lemon zest
Steps
- Preheat oven to 450°F.
- In a large bowl sift flour, baking powder, sugar, and salt. Make a well in the center and pour in the cream. Combine with as few strokes as possible. Turn dough out onto a lightly floured surface. Handle dough as little as possible.
- Pat into a ¾" thick disk. Using knife or bench scraper, cut disk into wedges. Bake until golden, about 15 minutes.
Notes
- be careful of fresh berries. They can squish and the scones can turn out soggy.
