Yonnie's Cream Scones
I made these for Metta's tea parties a lot, with half size scones.
Ingredients
  • 1¾ cup flour
  • 2¼ teaspoon baking powder
  • 1 tablespoon sugar (Y uses 2)
  • ½ teaspoon salt
  • 1¼ heavy cream
  • subheading: Optional additions:
  • raisins and chopped pecans (Y adds)
  • cranberries/orange zest
  • fresh blueberries/lemon zest
Steps
  1. Preheat oven to 450°F.
  2. In a large bowl sift flour, baking powder, sugar, and salt. Make a well in the center and pour in the cream. Combine with as few strokes as possible. Turn dough out onto a lightly floured surface. Handle dough as little as possible.
  3. Pat into a ¾" thick disk. Using knife or bench scraper, cut disk into wedges. Bake until golden, about 15 minutes.
Notes
  • be careful of fresh berries. They can squish and the scones can turn out soggy.
