Classic Three Bean Salad (Vegan)
Ingredients
  • 1 15-ounce can kidney beans
  • 1 15-ounce can chickpeas
  • 1 cup green beans frozen (see notes if using fresh)
  • ¾ cup celery (about 2 stalks)
  • ¾ cup red onion (about ½ medium onion)
  • ¼ cup parsley finely chopped
  • 1 shallot finely chopped

  • ⅓ cup honey (can substitute with agave to make vegan)
  • ⅓ cup apple cider vinegar
  • ⅓ cup olive oil
  • ½ teaspoon celery salt
  • ½ teaspoon salt
  • ½ teaspoon pepper
