PAT’S MIXED VEG TOMATO AND SPAGETTI FREE SOUP

Ingredients
  • 1 white onion finely chopped
  • 2 teaspoon lazy garlic in white vinegar
  • 1 Vegetable stock cube
  • 1kg bag frozen mixed veg ( I use Asda )
  • 150 gms dried spaghetti broken into pieces
  • 500gm Cartoon n  of passsata (no added oil I use Napolini )
  • 2 teaspoon Italian herbs
  • Salt to season
  • Water
Steps
  1. In the Instant Pot put all the veg into the inner pot ensures all the veg and spaghetti is covered with water pour the passsata on top ( you don’t need to stir it until it’s finished cooking ) set soup function for 5 minutes high pressure, when finished let it go to NPR  (natural Pressure release ) remove the lid and stir through.
  2. For the hob Use a large saucepan and Put the mixed veg, onion, lazy garlic and the veg cube crumbled and dissolved into water into a saucepan add the broken spaghetti cover with water and add the carton of passata on top and  stir through. Bring to the boil and simmer until veg is to your liking season to taste.
