El Pollo Loco Barbecue Black Beans

Ingredients
  • 2 slices bacon
  • 1½ T. bacon grease
  • ½ small onion, minced
  • 2 t. garlic, minced
  • 1 lb. 4 oz. raw black beans
  • ½ cup barbecue sauce
  • ¼ teaspoon liquid smoke
  • 2 T. canned chipotle chiles in adobo sauce (I used 2 dried chipotle)
Steps
  1. In a sauce pan add the bacon grease, onion, pepper and garlic; cook until tender. Mix in all remaining ingredients. Heat until bubbling (30 minutes).
Notes
  • I added more chipotle in adobo than it called for and it was WAY too spicy for my dad.
  • I did my own beans, little over a lb.  soaked them 18 hrs, pressure cooked with 4 cups water and 2 chipotles dried, high, 6 minutes, natural release, drained, saved the liquid, reduced down with ½ c. BBQ sauce, immersion blended a quarter of the beans, salted. I’d use a few more chipotles.
