Easy (Make-Ahead) Mexican Breakfast Casserole
Ingredients
  • 1 pound Mexican chorizo
  • ¾ cup chopped onion
  • ¾ cup chopped bell pepper any color
  • 9 ounces corn tortillas chips
  • 12 large eggs
  • 10 ounce can Rotel (stewed tomatoes and chiles)
  • ⅓ cup milk
  • ½ teaspoon salt
  • 1 ½ cups shredded Mexican blend cheese (or half cheddar and half pepper jack)
