Potato and Caramelized Onion Galette!
Ingredients

  • ½ tsp salt

  • 1 puff pastry, thawed
  • 2 to 3 med-large yukon gold potatoes, peeled and sliced thinly
  • ¼ cup extra virgin olive oil
  • ½ cup caramelized onions
  • 1 tsp fresh thyme, minced (optional)
  • ½ cup shredded gruyere cheese
  • ½ cup shredded swiss of cheddar cheese
  • ½ tsp salt
  • ½ tsp pepper
