PAT’S MINI CAJUN CHICKEN QUICHES

Ingredients
  • 1 Chicken breast coated in Cajun seasoning cooked
  • 300gm natural cottage cheese
  • 4 large eggs
  • 50gm Eat lean protein cheese
  • TRY ADDING ½ CUP OF UNSWEETENED ALMOND MILK AND ONLY 150 gms COTTAGE CHEESE
Steps
  1. Cut the chicken breasts into pieces and put at the bottom of the mini molds
  2. Blend the cottage cheese, almond milk  and eggs in a blender, stir through the protein cheese.
  3. Put 1 cup of water into the inner pot put the mold onto the trivet and cover with foil
  4. STEAM 8 minutes 10 minutes NPR
  5. When finished put the remainder of the mix into the mold and cook as the other

  • The mold I used was the Soledi silicone baby food storage which has 7 molds from Amazon can be used in the oven
