Vegan White Chili (Instant Pot and Stove Top)
Ingredients
  • 3 cups Vegetable Broth
  • 3 cups (about 2 cans) Cannellini Beans (or other white beans)
  • 1 small to medium Onion (chopped)
  • 8 oz Mushrooms (chopped)
  • 1 cup Celery (chopped)
  • ½ cup Red Pepper (chopped)
  • ½ cup Green Pepper (chopped)
  • 2 Garlic Cloves
  • 2 tbsp Tamari
  • 2 tbsp Cumin
  • ½ tsp Oregano
  • ¼ tsp Turmeric (for the health benefits)
  • Pepper (to taste)
  • Salt (to taste)
  • subheading: Cashew Cream:
  • 1 cup Cashews (soaked)
  • ¾ cup Water
  • ½ Lemon (just the juice)
  • 1 tsp Apple Cider Vinegar
  • ¼ tsp Salt (more if desired)
