Black Pepper Blue Swimmer Crab
Ingredients
  • 3 x 250g raw blue swimmer crabs, cleaned
  • 1 tbs sunflower oil
  • 6 garlic cloves, finely chopped
  • 5cm piece ginger, sliced
  • 1 tsp whole black peppercorns, crushed
  • 2 tsp brown sugar
  • 1 tbs fish sauce
  • Juice of 1 lemon
  • 2 eggs, lightly beaten
  • Coriander leaves and fried Asian shallots, to serve
