Roasted Butternut Squash Soup with Cinnamon Nutmeg Cream
Ingredients

  • 1 Butternut Squash peeled, seeded & cut into 1” cubes
  • 1 Carrot peeled & cut into 1” chunks
  • 7 tbsp salted Butter
  • 1 Yellow onion thinly sliced
  • 4 cloves Garlic thinly sliced
  • 2 tbsp EVOO
  • 4 cups chicken stock veggie would work too
  • 2 sprigs fresh Thyme
  • 1 Bay leaf
  • Salt and Pepper

  • 1 c Heavy cream
  • ⅓ c Sour cream
  • Cinnamon
  • Nutmeg
  • subheading: For the Frizzled Sage:
  • 10 to 20 fresh sage leaves
