Fried Rice with Crispy Tofu
Ingredients

  • 3 cups cooked rice (from 1 cup dry)
  • 1 carrot grated
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 teaspoon toasted sesame oil
  • 1 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • salt and pepper to taste
  • 2 scallions chopped
  • 2 tablespoons fresh basil chopped
  • Sriracha hot sauce for serving, optional
