BANANA AND CHICOLATE CHIP CAKE
Ingredients
  • 2lb loaf cake tin
  • 2lb loaf cake liners (easier lol )
  • 2 large soft ripe bananas or 3 small mashed
  • 85gms Sukrin Gold or Sukrin
  •  
  • 2 eggs
  •  
  • 140 gms vitalite or your version of it softened at room temperature
  •  
  • 250 gms self raising flour
  •  
  • 2 teaspoons baking powder
Steps
  1. Mash the banana well I do it on a large plate with a fork then put it into a bowl add the sugar mix through with the fork.
  2. Add the 2 eggs and mix with bananas electric hand mixer
  3. Add the vitalite and mix through
  4. Sprinkle the flour over the top of the mixture. I leave a little bit in the bottom and I toss the chocolate chips in it.
  5. Fold the flour in then add the chocolate chips and the last bit of flour mix through
  6. Put in the loaf cake tin in a pre heated fan oven at 170 degrees. For 30 mins I turn the tin around and reduced the oven to 160 for 30 mins. Put a cake tester in the middle of it comes out clean it’s cooked. If any mixture on it leave in a further 10 minutes and test again. Leave to cool in the tin for 10 mins put in a cooling rack and remove the liner xx
