Andouille Sausage and Smoked Chicken Gumbo
Ingredients
  • ⅔ cup butter, divided
  • ½ pound andouille sausage, halved lengthwise and cut into ¼-inch-thick slices
  • ¾ cup all-purpose flour
  • 1 green bell pepper, finely chopped
  • 1 large onion, finely chopped
  • 3 celery ribs, finely chopped
  • 4 garlic cloves, minced
  • 1 teaspoon table salt
  • 1 teaspoon freshly ground black pepper
  • 4 cups chicken broth
  • 1 (14.5-oz.) can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 2 ½ cups shredded chicken from rotisserie chicken
  • Garnish: sliced green onions
