Ingredients
  • 2 medium baking potatoes, like russets, boiled in skins and put through ricer
  • 1 cup crea
  • 6 garlic cloves, minced
  • salt
  • cracked black pepper
  • ¼ cup fresh lemon juice
  • ¼ cup extra virgin olive oil
  • ¼ cup red wine vinegar
Steps
  1. Put the potatoes through a food mill or ricer and place in a bowl for mixing. Whisk in the cream, minced garlic, olive oil, lemon juice, red wine vinegar. Add a little water if necessary to make a smooth mixture. Season with salt and pepper to taste.
  2. Keep cool until ready to use.
