Chicken and Sausage Jambalaya

  • 1 large white onion, chopped (about 2 cups)

  • 1 cup chopped celery (about 1 stalk)
  • 3 garlic cloves, minced
  • 2 bay leaves
  • 1 tablespoon Creole seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups uncooked converted rice
  • 3 cups chicken broth
  • 2 (14.5 oz.) cans diced fire-roasted tomatoes
