Grilled Eggplant Salad with Halloumi (Gluten Free)
Ingredients

  • 2 large eggs,, hard boiled, peeled, and halved

  • ⅓ cup pesto, (see note)
  • 2 Tablespoons extra virgin olive oil
  • 1 teaspoon lemon juice
  • ½ teaspoon granulated garlic
  • Salt & pepper, (to taste)
  • 1 to 2 Tablespoons water, (just enough to make the mixture pourable)
