Banana and Carrot Cake. My Daughter Baked This and It Was a Nice Surprise! Never Had This Combination Before.Recipe in Comments

Ingredients
  • 125 grams salted butter, cubed
  • 110 grams caster sugar
  • 1 banana
  • 2 carrots, peeled and grated
  • 2 eggs, beaten
  • 200 grams self raising flour
  • Splash of milk
  • 1 tablespoon cinnamon powder
Steps
  1. Preheat oven to 180°C. Cream together the butter and sugar until light and colour.
  2. Add the carrots and mash banana to the mixture. We then add the eggs. Mix until well combined.
  3. Finally, at the cinnamon powder and the flour to the mixture. If the mixture is too dry then add a splash of milk.
  4. Transfer to a greased mould. Bake for 40 to 50 minutes. Using a skewer check if the cake is cooked through. If it comes out clean, then the cake is ready. Allow to cool for 5 minutes,then remove from oven. Cool completely before serving.
