Mediterranean Chorizo & Risoni Salad with Roasted Tomatoes
Have a Mediterranean affair with this refreshing risoni and chorizo salad.

Ingredients
  • 2 x 250g punnet cherry tomatoes, halved
  • Olive oil spray
  • 1 chorizo sausage, sliced and cooked til crisp
  • 1 bunch broccolini
  • 1 cup risoni pasta, cooked, drained and cooled
  • ¼ cup capers
  • ¼ baby basil leaves
  • 2 tbs red-wine vinegar
  • 1 tbs extra virgin olive oil
  • 1 tsp dried oregano
  • salt & pepper to taste
Steps
  1. 1. Preheat oven 200°C.
  2. 2. Place tomatoes on paper lined tray and spray with oil. Bake for 10 minutes until slightly shrivelled.
  3. 3. Prepare pasta and chorizo.
  4. 4. In a food processor, process half cherry tomatoes and add red-wine vinegar, oil, dried oregano. Process until combined and add salt and pepper.
  5. 5. Combine chorizo, broccolini, pasta, capers, basil leaves, remaining roasted cherry tomatoes and toss with dressing.
