Easy Chickpea Tuna Salad (No-Tuna)
Ingredients
  • 2 15- oz cans chickpeas drained and rinsed
  • 1 cup celery diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh basil finely chopped
  • 1 medium ripe avocado chopped (optional)
  • subheading: Cashew-Mustard Dressing:
  • ½ cup water
  • ½ cup raw cashews or cooked white beans
  • 3 tablespoons lemon juice or lime
  • 2 tablespoons Dijon mustard
  • 2 teaspoons apple cider vinegar
  • 1 medium garlic clove
  • 2 to 3 teaspoons kelp granules optional
