Ninja Foodi Chili Con Carne from Dry Beans
Classic chili from dry beans in about an hour

Ingredients
  • 16 oz dry red kidney beans (rinsed and cleaned)
  • 8 cups water
  • 1 bay leaf (optional)
  • ½ onion (optional)
  • 1tsp apple cider vinegar (optional)
  • 2 tsp salt (optional)
  • 2 Tbs oil (olive or vegetable)
  • 1 to 2 lbs Lean Ground meat ( beef or turkey)
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 2 28 oz cans crushed tomatoes
  • 1 large green bell pepper (seeded and diced)
  • 2 large jalapenos (seeded and diced)
  • 3 Tbs ground cumin
  • 2 Tbs onion powder
  • 2 Tbs garlic powder
  • 2Tbs chili powder
Steps
  1. Add 16 oz. Dry kidney beans, 8 cups water, 1 bay leaf and half onion to pressure pot.
  2. Close lid and pressure valve. Set to Hi and 45 minutes.
  3. When done, carefully release pressure and remove lid.
  4. Stir in salt and apple cider vinegar.
  5. Pour beans and liquid into another container to hold for later.
  6. Set to saute on medium
  7. Add 2 Tbs oil and diced onion, stir till soft and golden
  8. Add minced garlic and stir about 2 minutes
  9. Add lean ground meat (beef or turkey) and saute till partly cooked chunks.
  10. Add canned tomatoes and return drained beans and 2 cups bean liquid to the pot.
  11. Stir well then place pressure lid back on with seal closed.
  12. Set on hi and set timer for 15 minutes.
  13. When done, carefully release pressure and remove lid.
  14. Set to saute on med or medium low and stir in jalapenos, bell peppers and spices and simmer for about 5 minutes.
  15. Add salt to taste.
Notes
  • I use lean ground turkey with sodium free beef boullion powder instead if beef.
  • Most recently, 2 bell peppers, 5 large Jalapenos seeded, 1 habanero seeded, 8 cloves garlic, unable to find Sodium free bouillon, 1 extra Tbs garlic powder, onion powder, chili powder and cumin.
  • To make with canned beans, use 2 large cans of beans and start at step 6. And simmer with all ingredients in.
