Ingredients
  • 3 to 4 slices bacon (I use thick-cut bacon)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 ½ lbs. boneless, skinless chicken breasts, cut into ½-inch pieces
  • 2 small sweet potatoes, cut into ¼-inch pieces
  • 1 lb. Brussels sprouts, trimmed and halved (quartered if they are large)
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon kosher salt, divided
  • ½ teaspoon black pepper, divided
  • ¼ teaspoon nutmeg
  • 1 small red apple (I use Fuji or Gala), diced
  • ¼ to ½ cup low-sodium chicken broth (see notes)
  • ½ cup walnuts, roughly chopped
  • ⅓ cup dried cranberries
  • 1 tablespoon chopped fresh thyme (see notes)
