5 min Chickpea Curry - Happy Pear

Ingredients
  • ⅓ to 1 Red onion Sliced
  • Grated 2 Cloves of garlic
  • Grated Ginger
  • Half a red chilli sliced thinly Crossways
  • 1 TBSP  curry powder
  • 1 tsp coriander
  • 1 tsp cumin
  • 1tsp sweet paprika
  • 1 Tin chopped Toms
  • 1 tin Coconut milk
  • Large bunch of coriander or chives
  • Grated Zest of a lime
  •  
  • 5min couscous to serve
Steps
  1. Pour boiling water over couscous to just cover. Cover and leave
  2. Put pan on heat and add red onion and cook til translucent
  3. Add garlic and ginger and 2tsp of water
  4. Add all spices and cook for a few mins
  5. Add tin of chopped Toms
  6. Add tin of coconut milk
  7. Stir and cook
  8. Add salt And pepper
  9. Chop coriander and stalks and add
  10. subheading: Optional:
  11. Add in juice of the lime
  12. Taste for seasoning and adjust
  13. Serve over couscous. Could add toasted almond flakes, chopped chives, coriander leaves in the couscous
Notes
  • Add thin sliced red or green pepper and/or halved button mushrooms
