Cauliflower, Chia and Chickpea Bliss Balls
Ingredients
  • 300g cauliflower, cut into florets
  • 400g can chickpeas, rinsed, drained
  • ⅓ cup fresh coriander leaves, chopped
  • 1 green shallot, trimmed, chopped
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 2 tbsp wholemeal spelt flour
  • 1 tsp baking powder
  • 1 lemon, rind finely grated
  • 1 garlic clove, crushed
  • 2 tbsp white chia seed, plus ½ cup extra to coat
  • subheading: Dressing (optional):
  • 130g (½ cup) Greek yoghurt
  • 1 tbsp lemon juice
  • 1 tbsp tahini
