Vegetarian BBQ or Sloppy Joe
put it on buns! put it over rice!
Ingredients
  • 8 oz package tempeh, chopped
  • 1 onion, diced
  • 1 green pepper, diced
  • 2 carrots, diced
  • 4 cloves garlic, minced

  • 1 can pinto beans
  • 1 can vegetarian refried beans
  • 1 bottle BBQ sauce (12 oz? 16 oz? really, to taste)
  • 1 can diced tomatoes

  • cumin
  • cinnamon
  • nutmeg
  • cayenne (or siracha?)
  • clove
Steps
  1. Saute first 5 ingredients until onions are translucent and the remainder is brown. Add to slow cook or stew pot
  2. Add remainder of ingredients PLUS some spices from above, to taste. I'm a fan of a lot of cumin for this, and maybe a dash of everything else. Slightly mash the pintos, and maybe the tempeh too
  3. Cook until all vegetables are tender
